  • 2 large chicken breasts or 4 chicken thighs
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable oil for frying
  • 1/4 cup tonkatsu sauce for serving

Instructions
 

  • Pound chicken to an even thickness of about 1/2 inch.
  • Season both sides with salt and pepper.
  • Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  • Heat vegetable oil in a skillet to 350°F.
  • Fry chicken 3–4 minutes per side until golden brown and cooked through.
  • Transfer to a wire rack or paper towels and rest for 5 minutes.
  • Slice and serve with rice, shredded cabbage, and tonkatsu sauce.

Notes

For extra crispiness, lightly toast the panko before breading the chicken.
