  • 400 g spaghetti
  • 300 g Italian sausage
  • 3 cups fresh spinach
  • 1 cup cherry tomatoes
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup olive oil
  • 1/2 cup Parmesan cheese or shredded mozzarella
  • to taste salt
  • to taste black pepper

Instructions
 

  • Cook spaghetti in salted water until al dente, reserving 1 cup pasta water.
  • Brown Italian sausage in olive oil, then set aside.
  • In the same skillet, melt butter, sauté garlic until fragrant.
  • Add spinach and tomatoes, cook until spinach wilts.
  • Return sausage, add spaghetti, and toss with pasta water.
  • Stir in cheese until melted and creamy.
  • Season with salt and pepper, then serve hot.

Notes

Reserve extra pasta water to adjust creaminess. Use freshly grated Parmesan for best results.
