Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 0.5 cup breadcrumbs
- 1 egg, beaten
- 1 cup Korean BBQ sauce
- 4 cups cooked white rice
- 0.5 cup shredded carrots
- 0.5 cup shredded purple cabbage
- 0.5 cup sliced cucumber
- 4 soft-boiled eggs
- 1 tbsp sesame seeds
- 2 green onions, chopped
In a bowl, mix ground beef, ground pork, garlic, ginger, soy sauce, sesame oil, breadcrumbs, and egg. Mix gently until just combined.
Form 1 to 1 ½ inch meatballs and cook in an oiled skillet over medium heat until golden brown on all sides.
Add Korean BBQ sauce to the skillet, simmer, and coat the meatballs until glazed.
Cook rice, slice cucumbers, shred carrots and cabbage, and make soft-boiled eggs.
Add rice to bowls, top with meatballs, vegetables, and eggs. Drizzle extra sauce and garnish with sesame seeds and green onions.
