  • 2 large cucumbers, sliced
  • 3 medium tomatoes, cut into wedges
  • 1 medium red onion, thinly sliced
  • 1/2 cup vinegar
  • 1/4 cup olive oil
  • 1 tablespoon sugar or honey
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions
 

  • Wash and dry cucumbers, tomatoes, and onions.
  • Slice cucumbers, cut tomatoes into wedges, and thinly slice onions.
  • In a large bowl, whisk together vinegar, olive oil, sugar or honey, parsley, oregano, salt, and pepper.
  • Add vegetables to the bowl and toss gently to coat.
  • Cover and refrigerate for at least 2 hours, tossing once during chilling.
  • Adjust seasoning before serving and enjoy chilled.

Notes

Use English or Persian cucumbers for less water content and a firmer bite. For extra flavor, add fresh dill or a splash of lemon juice before serving.
