Ingredients

  • 1 pound smoked or andouille sausage, sliced
  • 1 cup red bell pepper, diced
  • 1 cup yellow bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 3 cups cooked rice
  • 2 tablespoons olive oil or butter
  • 2 tablespoons fresh parsley, chopped
  • 1 lime cut into wedges

Instructions
 

  • Heat oil or butter in a skillet and sear sausage slices 3-4 minutes per side. Remove.
  • Sauté onion and peppers 5-6 minutes; add garlic and cook 30 seconds.
  • Stir in Cajun seasoning until veggies are coated.
  • Return sausage, add cooked rice, stir, and simmer 2-3 minutes.
  • Top with parsley and serve with lime wedges.

Notes

Adjust Cajun seasoning to your spice preference. Add extra veggies for variety.
