  • 1.25 lb sirloin steak, cut into 1-inch cubes
  • 1 tsp kosher salt plus more to taste
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp crushed red pepper flakes adjust to taste
  • 2.5 cups low-sodium beef broth
  • 8 oz rotini pasta, dry
  • 1 cup heavy cream
  • 0.75 cup freshly grated Parmesan cheese plus more for serving
  • 0.5 tsp onion powder optional
  • 1 tbsp fresh parsley, chopped for garnish

Instructions
 

  • Pat steak dry; season with salt, pepper, and paprika. Melt 2 tbsp butter in a Dutch oven over medium-high heat and sear steak 2–3 minutes per side. Transfer to a plate.
  • Add remaining 2 tbsp butter. Stir in garlic and red pepper flakes; cook 30–60 seconds until fragrant.
  • Pour in beef broth; scrape up browned bits. Bring to a boil, add rotini (and onion powder), then simmer 9–11 minutes, stirring occasionally, until al dente.
  • Lower heat; stir in heavy cream and Parmesan until smooth and slightly thickened, 2–3 minutes.
  • Return steak (and juices) to pot; toss to coat. Adjust seasoning, garnish with parsley, and serve.

Notes

For extra saucy pasta, add a splash of warm broth before serving. Prefer milder heat? Use 1/4–1/2 tsp red pepper flakes and adjust at the end.
