  • 1.5 lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper, cut into 1-inch pieces
  • 0.33 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • In a bowl, whisk together soy sauce, honey, olive oil, garlic, and ginger. Season with salt and pepper.
  • Add chicken cubes to the marinade, cover, and refrigerate for 30 minutes to 4 hours.
  • Preheat grill to medium-high and lightly oil the grates.
  • Thread chicken, pineapple, and bell peppers onto skewers.
  • Grill kabobs 10–12 minutes, turning occasionally, until chicken is cooked and slightly charred.
  • Serve hot and enjoy with your favorite sides.

Notes

Soak wooden skewers before grilling and brush kabobs with marinade in the last 2 minutes for extra flavor.
