  • 1.5 cups graham cracker crumbs
  • 6 tablespoons unsalted butter melted
  • 16 ounces cream cheese softened
  • 6 ounces white chocolate melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup raspberries fresh or frozen
  • 1 tablespoon lemon juice
  • 0.33 cup powdered sugar for mousse
  • 1 tablespoon unflavored gelatin
  • 1 cup heavy cream cold
  • 0.5 cup raspberry jam or puree for glaze
  • 2 tablespoons powdered sugar for glaze
  • 1 teaspoon lemon juice for glaze
  • fresh raspberries for garnish

Instructions
 

  • Mix graham cracker crumbs with melted butter until combined. Press into a springform pan and refrigerate.
  • Beat cream cheese until smooth. Stir in melted white chocolate and vanilla. Spread over crust and chill.
  • Bloom gelatin in water. Heat raspberry puree with powdered sugar and lemon juice. Stir in gelatin and let cool. Fold in whipped cream. Pour over cheesecake layer and chill until set.
  • Heat raspberry jam with powdered sugar and lemon juice. Cool slightly, then spread over mousse. Chill to set.
  • Garnish with fresh raspberries before serving.

Notes

Use a hot knife to slice cleanly through the layers.
For stronger raspberry flavor, add a bit of raspberry extract to the mousse.
