  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup breadcrumbs or panko
  • 2 eggs, beaten
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon zest or 1 tablespoon lemon juice (optional)
  • 1/4 cup pomegranate seeds (optional, for garnish)

Instructions
 

  • Pulse pistachios in a food processor until crumbly and mix with breadcrumbs, garlic powder, salt, and pepper.
  • Pat chicken dry and pound lightly for even thickness.
  • Dip chicken in beaten eggs, then coat evenly in the pistachio mixture.
  • Optional: Sear in olive oil for 2 minutes per side for extra crispiness.
  • Bake at 375°F (190°C) for 20–25 minutes or until internal temperature reaches 165°F (74°C).
  • Garnish with lemon juice and pomegranate seeds before serving.

Notes

For extra flavor, add a light drizzle of honey before baking or substitute pistachios with pecans for a twist.
