  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups brewed espresso or strong coffee cooled
  • 24 Savoiardi ladyfingers
  • 3/4 cup chopped pistachios
  • 2 tablespoons cocoa powder

Instructions
 

  • Brew espresso or strong coffee and let it cool slightly.
  • Whip heavy cream until soft peaks form.
  • Whisk egg yolks and sugar until pale and creamy.
  • Fold mascarpone cheese into the yolk mixture, then fold in the whipped cream.
  • Briefly dip each ladyfinger into cooled coffee.
  • Layer ladyfingers, mascarpone cream, and pistachios in a dish.
  • Repeat layers and finish with mascarpone cream on top.
  • Dust with cocoa powder, add pistachios, and chill for 4 hours or overnight.

Notes

Best served chilled. Do not freeze as it affects the texture.
