  • 1 sheet puff pastry, thawed
  • 4 oz cream cheese, softened
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 12 fresh raspberries
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • 2 tablespoons powdered sugar (for dusting)

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll the puff pastry sheet to smooth creases. Cut into 12 squares (about 2x2 inches).
  • Lightly score a border around each square without cutting through.
  • Mix cream cheese, sugar, and vanilla until smooth. Spoon about 1 teaspoon into the center of each square.
  • Place 1 raspberry in the center of each pastry bite, pressing gently into the filling.
  • Brush edges with egg wash.
  • Bake for 15–18 minutes or until puffed and golden brown.
  • Let cool slightly, then dust with powdered sugar or drizzle with glaze before serving.

Notes

Serve slightly warm for the best texture. Can be frozen and reheated.
