  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 4 large egg yolks
  • 1/3 cup honey for custard
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 1 1/2 cups fresh strawberries halved
  • 2 tablespoons lemon juice fresh
  • 1 teaspoon lemon zest
  • 1 tablespoon honey for drizzle
  • 1/4 cup powdered sugar
  • 8 pre-baked tart shells
  • fresh mint leaves optional, for garnish

Instructions
 

  • Pre-bake tart shells according to package or homemade recipe; cool completely.
  • In a saucepan, whisk egg yolks, honey, and cornstarch until smooth.
  • Gradually add milk and cream, cooking over medium heat until thickened.
  • Remove from heat and stir in butter until glossy.
  • Spoon custard into tart shells; chill for at least 2 hours.
  • Mix lemon juice, zest, and honey for drizzle.
  • Top tarts with fresh strawberries, drizzle lemon sauce, sprinkle powdered sugar, and garnish with mint leaves.

Notes

Serve chilled and garnish just before serving for the freshest presentation.
