  • 2 chicken breasts, cut into bite-sized pieces
  • 8 oz fusilli or rotini pasta
  • 3 cloves garlic, minced
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1.5 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions
 

  • Season chicken pieces with Cajun seasoning, salt, and pepper. Heat olive oil and butter in a skillet over medium heat and sauté chicken until golden and fully cooked. Remove and set aside.
  • Cook pasta in salted boiling water according to package instructions. Reserve ½ cup pasta water, then drain.
  • In the same skillet, sauté garlic for 30 seconds, then add sun-dried tomatoes and heavy cream. Simmer 5 minutes.
  • Stir in Parmesan and a pinch of Cajun seasoning until smooth. Toss in cooked pasta, adding reserved water as needed.
  • Return chicken to skillet, combine well, and garnish with parsley. Serve hot.

Notes

Add a splash of pasta water or cream when reheating to restore the sauce’s creamy texture. For a smoky twist, sprinkle with a pinch of smoked paprika before serving.
