  • 2 boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 1 medium carrot
  • 1 cup mushrooms
  • 2 cups cooked wild rice
  • 1/2 cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil

Instructions
 

  • Slice chicken into thin strips and chop vegetables into bite-sized pieces.
  • Cook wild rice according to package directions.
  • Heat sesame oil in a wok or skillet over medium-high heat. Add chicken and cook until golden and fully cooked.
  • Add broccoli, carrots, mushrooms, and bell peppers. Stir-fry 3–5 minutes until tender-crisp, then add snap peas.
  • Pour teriyaki sauce over chicken and vegetables. Stir to coat and simmer 1–2 minutes.
  • Serve over warm wild rice and garnish with sesame seeds or green onions if desired.

Notes
